Tomato Salsa (a palate teaser)

Ingredients:

  • 2 Roma tomatoes, peeled and finely diced
  • 3 hibiscus flowers in syrup from Delicious Hibiscus Flower (whole), drained and chopped finely
  • ½ tsp French mustard 2 tbsp chives, finely chopped
  • 1 tbsp olive oil
  • Salt flakes and freshly ground black pepper
  • 100g sour cream
  • 4 hibiscus flowers in syrup from Delicious Hibiscus Flower (whole)
  • 2 tbsp cottage cheese

Direction:

  1. Gently toss tomatoes, flowers, chives, mustard and olive oil together. Season with salt flakes and black pepper to taste.
  2. Place salsa on a serving spoon and top with a little sour cream and a whole flower stuffed with cottage cheese.
